It’s harvest season at Minthis! Our favourite time of year has come and we started by collecting carobs from the trees on the golf course. With the help of our golf team and our local friends in the neighbouring village, we will make Carob Syrup and traditional ‘Pastelli’ (carob toffee) for the first time. Carob syrup is a healthy and sweet snack, it can also be used in baked goods, salad dressings, marinades and sauces in place of honey or sugar.

The carob tree is an indigenous species of the island that has been cultivated for thousands of years. Once it was the island’s major export, the carob pods or ‘black gold’, were prized for their versatility and their super high nutritional values. At Minthis, the carob trees are surrounding the historic monastery near the vineyards and beautiful fig tree, all bearing delicious ripe fruit.
