We have adopted a “zero-mile” policy for the supply of raw ingredients used in our restaurants. This approach allows for a higher level of control over raw ingredients, which are obtained through “home-grown” production. With this method, a substantial amount of energy can be saved by eliminating transport-related CO2 emissions while helping to support our local community.
All of our kitchens and canteens use the best locally sourced ingredients: most of the fruits and vegetables are grown in the fields of the property, all meats are selected from the best local producers and directly butchered in Borgo Egnazia, and all of our extra virgin olive oil is obtained from the property’s olive groves and produced by Masseria San Domenico.
Within the property, there is a spice garden with a large selection of aromatic herbs, a large area dedicated to the growing of vegetables, and a large grove of lemons, apricots, prickly pears, and many other seasonal fruits.
